
Why We Roast
From the inception of Post, we wanted to roast our own coffee. It gave us creative and financial control of the product that was the backbone of our business. It was a step in this journey of coffee production that was leading us towards honing a craft to share with our communities, in the same way the producers shared it with us.
We spent all of our savings on buying a roaster, a Diedrich IR-5. I read every book I could on coffee roasting. I talked with every friend I had that was in the coffee industry with roasting experience.
As many great things do, we started in a garage. We hooked up propane tanks to our Diedrich, hand plotted graphs minute by minute to observe our roasting curves, and extensively cupped the product to assure quality. Our kids were always around, always climbing on coffee bags and cupping coffees with us. Humble beginnings, and I’m thankful for them.
Today, we use software to lock in our roasting profiles to make sure they are consistent batch after batch. We have the privilege of working with amazing producers from around the world, and sharing their hard work and ours.
We cup and evaluate our coffees weekly to assure quality, making minor adjustments when necessary to guarantee the best product we can offer, because it matters. A cup of coffee may seem like a daily need or convenience, but it is a genuine labor of love that has grown from the dirt, been carefully and skillfully farmed and processed, and comes to us to be crafted; Roasted and brewed with care. Why? Because coffee is genuine connection, global and local, and it matters. Cheers.
