For this Gesha lot, a good harvest is carried out, only ripe cherries are picked. It is taken to the mill where it is fermented in cherry for 36 hr in Grainpro bags. After this time, it is pulped and fermented for an additional 100 hrs. with controlled temperature. After the fermentation time is over the coffee is washed and taken to the Marquesina for drying over the course of 8 - 15 days, depending on the amount of sunlight received.
